Two DTU projects qualified for the finals:
- The Cheery Lady tea was developed by a team of DTU Food Industry students, including Tran Thi Thuy Trang, Dang Thi Quynh Tram, Dang Thi Hoang Duyen and Nguyen Chi Toan, who majors in Biotechnology. The tea is 100% herbal, consisting of Herba Leonuri Heterophylli, Red Apple, Rose, Goji Berry and Longan. The ingredients are processed using freeze-drying technology, which helps to fully conserve the active ingredients while minimizing the sulfur content. Cheery Lady tea reduces menstrual pain, increases skin quality and blood circulation, and can also be used for people with diabetes. The product was manufactured under strict medical supervision and was awarded a consolation prize. Three other national-level articles have been published relating to this topic.
- The “Survey on the relationship between Roasting conditions, Sensory and Chemical parameters of Robusta Coffee beans in Gia Lai province, Vietnam" project was developed by DTU Food Technology students Nguyen Duc Truong and Truong Dai Duong. Although coffee is the most popular beverage in the world, currently the quality of roasted coffee is mainly evaluated by its aroma, but an alternative, objective method is now required. The research team analyzed the key chemical components and their changes during the roasting process and built a model to assess the quality based on specific signs from its ingredients.
